Cooking Up Memories: Chicken Taco Soup

I completely skipped last week in cooking through these recipes.  I made several snacks for our Super Bowl Party and then the week came and we hit the ground running with something every single night of the week and all last weekend, so I just didn't do much cooking.   But this week I was back in the swing of it.

We hosted our Friday Night Home Group with the International Students this week so I was in charge of the main dish.  I decided to try out one of my recipes for that.  My Aunt Carol gave me this recipe for Chicken Taco Soup (I wrote about her a little in my post about her Hashbrown Casserole Recipe).  She and I love a lot of the same things, so I know any recipe of hers will be good and this one definitely was!


I doubled the recipe, so I started out yesterday cooking up 5 pounds of Chicken so it would be ready for the soup.  Then I made 1 batch early in the day and heated it back up in the crockpot last night while the 2nd batch simmered on the stove.  We had a relatively small group last night (about 17 people for dinner--so just small compared to other weeks!) so everyone got enough--and with people getting seconds there was no left over soup, which I think means it was a successful recipe!

Chicken Taco Soup
*2 lbs cooked and diced Chicken *2 cans Chicken Broth *2 cans Cream of Chicken Soup *2 cans Creamed Corn *1 can Rotel with Cilantro *1.5 teaspoon Cumin *1/2 package Taco Seasoning
-Add all together in a large pot and heat thoroughly {The first batch I dumped everything in and stirred it up, but the pot was almost full so it was hard to get it completed combined.  So with the second batch, I whisked together the soups and broth and seasonings until combined, then added the corn, Rotel and chicken--both batches turned out great, I just felt a little better about the second one!}
-Stir in 16 ounces Sour Cream
-Put in bowls and sprinkle with cheese and tortilla chips {we also added Avocado last night!}

This is definitely one we will be having again!  I sent my Aunt Carol a message last night to tell her I made it for our group and she said they had just finished eating it for dinner too!  I love all the tried and true recipes from my favorite people.

 We set up all the food on our counter.  All of the other people from our church bring sides and desserts, but I snapped this picture before anyone else came.  And by the way--I know you can't see it well, but I LOVE my chalkboard banner that my friend Amy gave me!  She gave me 2 of them and I love getting to decorate with them and change out the messages.  There are just enough spots on this one to spell out Welcome, which makes it even more perfect!

 I also love getting to use the serving dishes we got for our wedding-- we pulled out this 2 gallon drink server for our water last night along with our ice bucket

And a few card tables in our spare bedroom.  These place mats were a Christmas gift from my sweet mother-in-law.  The other side has a Christmas pattern, but I felt like the red with white polka-dots was perfect for Valentine's weekend!

 
 Dinner and Bible study with friends is a great end to the week!
